Super Simple Tangy Chicken
2 lbs. boneless/skinless chicken breast
Cider vinegar
Garlic powder (not salt)
Black pepper
Cayenne pepper
Lay chicken in a baking dish and pour in enough vinegar to cover about 3/4 of the breast. Heavily dust chicken and vinegar with garlic powder. Use more or less to your liking. Sprinkle with black and cayenne pepper to your taste.
Bake at 375 until done (breast at about 170)
Serve chicken and sauce over your favorite rice. Makes roughly eight 4 oz. servings of chicken, 186 calories.

Chocolate Nut Protein Balls
1/2 cup oat flour
1/3 cup vanilla whey
1/3 cup ground flaxseed
3 teaspoons cocoa powder
1/4 cup of almond or natty peanut butter
1/4 - 1/2 cup water
1/2 teaspoon vanilla extract
stevia to taste (I generally use 1 heaped teaspoon but use more if you want 'em sweeter)
shredded coconut
Mix oat flour, whey, cocoa and flax in a bowl.
Add water, nut butter and vanilla and mix together.
Add in stevia.
Pour a layer of shredded coconut onto a plate.
Take a spoon and remove a ping pong ball sized amount of the mix, roll into the shredded coconut, place on a baking tray or similar. Repeat until all the mix is used. Stick the tray into the fridge for 30 mins (or the freezer if you want them to harden a bit more. Then enjoy.

Chazz's Strawberry Shortcake Pancakes: Heat skillet on medium and spray with Pam. Mix 1c egg whites, 3 tbsp water, 1/2 cup oats and Truvia to taste. Mix together and pour in a hot skillet. While one side is cooking, place several sliced strawberries on top. Or you could mix in batter chopped strawberries. Let it cook, checking the backside not to burn. Flip and cook for about 1 min. (don't burn!) Place on plate and garnish with sugar free strawberry jam and/or sugar free syrup. Add whipped topping to make it even better!! YUM!
(ofcourse other berries can be used)
Apple Pie Redo
Slice any apple with skin on
Sprinkle cinnamon on the apples
Microwave for three minutes
Let cool, then enjoy! Tastes like apple pie.
Change it up: sprinkle oats over the top of apples after sprinkling with cinnamon and then spray top with spray butter. Cook the same. It will act as a crust! MMM!

Veggie Burgers
Ingredients
2 teaspoons olive oil
1 small onion, grated
2 cloves crushed garlic
2 carrots, shredded
1 small summer squash, shredded
1 small zucchini, shredded
1 1/2 cups rolled oats
1/4 cup shredded Cheddar cheese
1 egg, beaten
1 tablespoon soy sauce
1 1/2 cups all-purpose flour
Directions
1. Heat the olive oil in a skillet over low heat, and cook the onion and garlic for about 5 minutes, until tender. Mix in the carrots, squash, and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat, and mix in oats, cheese, and egg. Stir in soy sauce, transfer the mixture to a bowl, and refrigerate 1 hour.
2. Preheat the grill for high heat.
3. Place the flour on a large plate. Form the vegetable mixture into eight 3 inch round patties. Drop each patty into the flour, lightly coating both sides.
4. Oil the grill grate, and grill patties 5 minutes on each side, or until heated through and nicely browned.
